Tapping Trees

Somerset County is the nation’s leading producer of maple syrup. Native Americans were the first in the region to make the liquid treat. When it comes to making maple syrup, Acer saccharum, commonly known as hard rock or sugar maple, is the tree of choice. It takes forty years to grow a maple tree large enough to tap. The six-week sugaring season begins the last week of February and lasts until early April.
