While some specialty foods are made in small batches in someone’s licensed kitchen, others have become so successful that they’re megastars. Ducktrap River, for instance, started 23 years ago as a trout farm with two employees. They decided to try smoking seafood the natural way, with no chemical preservatives or artificial flavors, just the tangy scents of the Maine woods. Now the company has 145 employees and more than 100 products that are shipped all over the world, according to general manager Don Cynewski.
