Scallop Saute Montauk

Coat 1 pound scallops with:

  • ¼ cup flour 
  • ½ teaspoon salt 
  • bit of black pepper

Cook in ¼ cup melted fat in fry pan over low heat until lightly browned and tender.

Heat and pour over:

  • 2 tablespoons melted butter 
  • 2 tablespoons lemon juice 
  • 1 teaspoon grated lemon rind 
  • 1 tablespoon chopped parsley

Serves 4.
